4 large oranges, preferably organic
1 cup granulated sugar
1 cup water
1/2 cup dark chocolate (optional for coating)

Instructions
Start by washing the oranges thoroughly under running water. Peel the oranges, removing as much pith as possible.
Cut the peels into thin strips, about 1/4 inch wide. Place them in a pot, cover with water, and boil for 10 minutes. Drain and repeat once more.
Combine 1 cup of sugar, 1 cup of water, and a pinch of salt in a saucepan. Bring to a gentle boil until the sugar dissolves. Add boiled orange peels and simmer for another 20 minutes.
Preheat the air fryer to 300°F (150°C). Remove the peels from the syrup, allowing excess to drip off. Arrange them in a single layer in the air fryer basket and cook for 10-15 minutes, shaking halfway.
Let the peels cool for 5 minutes, then roll in granulated sugar while still warm for added crunch.
