  • 1 red bell pepper, sliced
  • ½ cup of edamame (shelled)
  • ¼ cup of chopped green onions
  • ¼ cup of cilantro, chopped
  • 1 avocado, diced
  • ¼ cup of sesame seeds
  • 3 tablespoons of soy sauce or tamari
  • 2 tablespoons of sesame oil
  • 1 tablespoon of rice vinegar
  • 2 teaspoons of honey or maple syrup
  • 1 clove of garlic, minced
  • 1 teaspoon of grated fresh ginger

  • Instructions

  • In a small bowl, whisk together the dressing ingredients: soy sauce (or tamari), sesame oil, rice vinegar, honey (or maple syrup), minced garlic, and grated fresh ginger.
  • Rinse the mixed greens and dry them thoroughly. Shred the cabbage and carrots, slice the red bell pepper, chop the green onions and cilantro, and dice the avocado.
  • In a large mixing bowl, combine the mixed greens, shredded cabbage, shredded carrots, sliced bell pepper, edamame, green onions, and cilantro. Toss gently to ensure all the ingredients are well mixed.
  • Pour the sesame dressing over the salad, tossing gently to coat evenly. Top with diced avocado and sprinkle sesame seeds for added texture. Serve immediately.
