4 cups of mixed greens (spinach, arugula, or romaine)
2 cups of shredded cabbage (green or purple)
1 cup of shredded carrots
1 red bell pepper, sliced
½ cup of edamame (shelled)
¼ cup of chopped green onions
¼ cup of cilantro, chopped
1 avocado, diced
¼ cup of sesame seeds
3 tablespoons of soy sauce or tamari
2 tablespoons of sesame oil
1 tablespoon of rice vinegar
2 teaspoons of honey or maple syrup
1 clove of garlic, minced
1 teaspoon of grated fresh ginger
Instructions
In a small bowl, whisk together the dressing ingredients: soy sauce (or tamari), sesame oil, rice vinegar, honey (or maple syrup), minced garlic, and grated fresh ginger.
Rinse the mixed greens and dry them thoroughly. Shred the cabbage and carrots, slice the red bell pepper, chop the green onions and cilantro, and dice the avocado.
In a large mixing bowl, combine the mixed greens, shredded cabbage, shredded carrots, sliced bell pepper, edamame, green onions, and cilantro. Toss gently to ensure all the ingredients are well mixed.
