25 jumbo pasta shells
2 cups cooked chicken, shredded
1 cup ricotta cheese
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
2 cups fresh spinach, chopped
2 cups marinara sauce
1 teaspoon garlic powder
1 teaspoon Italian seasoning
Salt and pepper to taste
Instructions
Boil a large pot of salted water and cook the jumbo pasta shells according to package instructions, usually 8-10 minutes. Drain and rinse under cold water to stop the cooking process.
In a large bowl, combine shredded chicken, ricotta cheese, half the mozzarella, grated Parmesan, chopped spinach, garlic powder, Italian seasoning, salt, and pepper. Mix until well incorporated.
Preheat the oven to 375°F (190°C). Spread a layer of marinara sauce into a baking dish. Stuff each shell with about 2 tablespoons of the filling mixture and place them in the dish seam-side up.
Pour the remaining marinara sauce over the stuffed shells and sprinkle with the remaining mozzarella cheese. Cover the dish with aluminum foil.
Bake in the oven for 25 minutes covered with foil. Remove the foil and bake for an additional 10 minutes or until the cheese is golden and bubbly.
Allow to cool slightly before serving, and garnish with fresh basil or parsley.
