2 cups of granulated sugar
1 cup of water

Instructions
Begin by thoroughly washing the oranges to remove any wax or pesticides. Next, slice off both ends of each orange, and then slice them into thin strips. Aim for around 1/4-inch thickness to ensure even cooking.
In a medium saucepan, combine the sugar and water. Bring the mixture to a boil, stirring until the sugar dissolves. Add the orange peels, reducing the heat to medium-low. Simmer the peels for about 45 minutes, until they are tender and translucent. Keep an eye on them to prevent burning.
After cooking, use a slotted spoon to transfer the peels onto a wire rack. Allow them to dry for at least 30 minutes.
While the peels are drying, melt the dark chocolate using a double boiler or in the microwave in short intervals (about 20 seconds each), stirring in between until smooth.
Once the chocolate is melted and the peels have cooled, dip half of each peel into the chocolate, allowing the excess to drip off. For a gourmet touch, sprinkle a small pinch of sea salt on top before the chocolate sets.
