1 can (14.5 oz) diced tomatoes, drained
1 cup heavy cream
2 teaspoons Cajun seasoning
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Instructions
Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Reserve about 1 cup of pasta cooking water before draining.
In a large skillet, heat the olive oil over medium heat. Add the smoked sausage, sautéing until it's browned and crispy for about 5-7 minutes.
Add the diced onion, garlic, and bell pepper to the skillet, stirring frequently, for about 3-4 minutes until the vegetables are tender.

Add the drained pasta to the skillet, mixing to coat with the sauce. If too thick, gradually add reserved pasta water until desired consistency.
