24 large jumbo pasta shells
2 cups cooked chicken, shredded
2 cups ricotta cheese
1.5 cups shredded mozzarella cheese, divided
1 cup grated Parmesan cheese
2 cups Alfredo sauce
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon Italian seasoning
Salt and pepper to taste
Fresh parsley for garnish (optional)
Instructions
Preheat your oven to 350°F (175°C). Boil water in a large pot and salt it. Cook the jumbo pasta shells according to package instructions until al dente, then drain and rinse under cold water to stop cooking.
In a large bowl, combine the shredded chicken, ricotta cheese, 1 cup of mozzarella, Parmesan cheese, garlic powder, Italian seasoning, and salt and pepper. Mix well until combined.
Using a spoon or piping bag, fill each pasta shell with about 2 tablespoons of the chicken and cheese mixture.
Spread 1 cup of the Alfredo sauce on the bottom of a 9×13 inch baking dish. Arrange the stuffed shells in a single layer, then pour the remaining Alfredo sauce over them. Sprinkle remaining mozzarella on top.
Cover with aluminum foil and bake for 20 minutes. Remove foil and bake for an additional 10-15 minutes until cheese is bubbling and slightly browned. Broil for 2-3 minutes for extra browning.
Let the dish sit for 5 minutes before garnishing with fresh parsley.
