1 pound of large, peeled, and deveined shrimp
1 cup of stone-ground grits
4 cups of chicken broth
1 cup of heavy cream
4 tablespoons of butter
3 cloves of garlic, minced
¼ cup of chopped green onion
1 cup of shredded cheddar cheese
1 tablespoon of Cajun seasoning
Salt and pepper to taste
Instructions
In a medium-sized pot, bring the chicken broth to a boil. Gradually stir in the grits, reduce the heat to low, and cook for about 20-25 minutes, stirring occasionally.
While the grits are cooking, melt 2 tablespoons of butter in a large skillet over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
Add the shrimp and Cajun seasoning, cooking until the shrimp turn pink, approximately 4-5 minutes.
Remove the shrimp from the skillet and set aside. In the same skillet, pour in the heavy cream and let it simmer for a few minutes. Stir in the remaining butter and cheddar cheese until melted.
Once the grits are done, stir in the green onions, and season with salt and pepper. Serve topped with the creamy shrimp mixture.
