12 ounces of spaghetti or linguine
1 pound of large shrimp, peeled and deveined
4 tablespoons of unsalted butter
2 tablespoons of olive oil
4 cloves of garlic, minced
1/2 cup of dry white wine or chicken broth
1 cup of heavy cream
1/2 teaspoon of red pepper flakes
1/4 cup of fresh parsley, chopped
Zest of 1 lemon
Salt and pepper, to taste
Instructions
Bring a large pot of salted water to a boil. Add the spaghetti or linguine and cook according to the package instructions until al dente. Drain and set aside, but reserve a cup of pasta water for later use.
In a large skillet, heat 2 tablespoons of olive oil and 2 tablespoons of butter over medium heat. Once melted, add the shrimp. Cook for about 2-3 minutes on each side until they turn pink and opaque. Remove them from the skillet and set aside.
In the same skillet, add the remaining butter and sauté the minced garlic for about 30 seconds until fragrant. Be careful not to burn it! Add the wine (or chicken broth) and let it reduce for about 2 minutes.
Lower the heat and stir in the heavy cream. Add in red pepper flakes, salt, and pepper to taste. Let the sauce simmer for a few minutes until it thickens slightly.
Introduce the cooked pasta to the sauce, tossing to coat each strand thoroughly. Then, return the shrimp to the pan and mix everything together gently. If the sauce is too thick, add some of the reserved pasta water to reach your desired consistency.
Finish your dish by stirring in the lemon zest and freshly chopped parsley. Serve immediately while hot!
