Instructions
Preheat your oven to 350°F (175°C). In a medium bowl, combine the flour and powdered sugar, then cut in the cold butter until the mixture resembles coarse crumbs. Add the egg yolk and mix until dough forms. Roll the dough into a ball, flatten it slightly, cover it in plastic wrap, and refrigerate for about 15 minutes.
After chilling, roll out the dough and place it in a tart pan. Prick the bottom with a fork to prevent puffing. Line with parchment paper and fill with pie weights or dried beans. Bake for 15 minutes, remove the weights, and bake for an additional 10-12 minutes until lightly golden. Let cool.
While the tart shells cool, whisk together the heavy cream, cornstarch, and vanilla extract in a saucepan over medium heat. Stir continuously until it thickens, then remove it from heat to cool slightly. Once cooled, fold in an additional tablespoon of whipped cream for that light and airy texture.
Once the tart shells are completely cooled, spread the cream filling evenly inside each shell. Arrange your choice of fresh fruits artistically on top.
