  • 1 cup of finely chopped scallions
  • 1 pound of ground pork
  • 1 tablespoon ginger, minced
  • 2 cloves garlic, minced
  • 2 tablespoons sesame oil
  • 3 tablespoons soy sauce
  • 1 tablespoon sugar
  • 1 teaspoon freshly ground pepper
  • 1 package of dumpling wrappers
  • Water, for sealing the dumplings
  • Cooking oil, for frying

  • Instructions

  • Remove the core from the napa cabbage and gently separate the leaves. Blanch the cabbage leaves in boiling water for about two minutes to soften them, then plunge them into an ice bath to halt the cooking process. Pat them dry with a clean kitchen towel.
  • In a large bowl, combine ground pork, chopped scallions, minced ginger, minced garlic, sesame oil, soy sauce, sugar, and pepper. Mix everything together until well combined.
  • Take one cabbage leaf and place about a tablespoon of filling in the center. Fold the leaf over the filling and roll it tightly, tucking in the sides as you go. Use a little water on the edges to seal the dumpling firmly. Repeat until all filling is used.
  • Heat a non-stick skillet over medium heat with a tablespoon of cooking oil. Place the dumplings in the pan, ensuring they aren’t overcrowded. Fry for 2-3 minutes until the bottoms are golden brown, then add a splash of water and cover with a lid to steam for about 5 minutes.
  • Once cooked, serve your dumplings hot with a side of soy sauce or a spicy dipping sauce.
