  • 4 slices of sourdough, brioche, or classic white bread
  • 1 pound of ground beef
  • 8 ounces of mixed cheese (cheddar, mozzarella, and provolone)
  • 2 tablespoons of butter or olive oil
  • 1 medium onion, diced
  • 1 teaspoon of garlic powder
  • ½ teaspoon of smoked paprika
  • Salt and pepper to taste
  • Optional toppings: sliced tomatoes, avocado, or jalapeños

  • Instructions

  • Heat a skillet over medium heat. Add diced onions and sauté until soft, about 3 minutes. Incorporate ground beef, breaking it apart with a spatula, season with garlic powder, smoked paprika, salt, and pepper. Cook until browned, approximately 7-10 minutes. Drain excess fat.
  • Prepare your bread by laying out the slices and spreading butter (or olive oil) on one side of each slice.
  • On the unbuttered side of two slices, layer mixed shredded cheeses, then add cooked beef mixture. Include any optional toppings and top with more cheese. Close the sandwich with remaining slices, buttered side facing out.
  • Heat skillet over medium-low heat. Place sandwiches carefully in the skillet, cooking 4-5 minutes on each side, pressing with a spatula to ensure even melting.
  • Once golden and crispy on both sides, remove from skillet, let cool for a minute, then slice in half and serve warm.
