2 to 3 pounds of beef chuck roast
1 packet (1 ounce) of onion soup mix or homemade onion seasoning
2 cups of beef broth or stock
1 can (10.5 ounces) of cream of mushroom soup
1 tablespoon of Worcestershire sauce
3 cups of baby carrots (optional)
2 tablespoons of cornstarch mixed with 2 tablespoons of cold water (for thickening)
Salt and pepper to taste
2 pounds of russet potatoes, peeled and chopped (for the mashed potatoes)
4 tablespoons of butter
1/2 cup of milk or heavy cream
Garlic powder, salt, and pepper to taste
Instructions
Start by trimming excess fat from your beef chuck roast. Cut it into large chunks for even cooking. Season generously with salt and pepper on all sides.
In a large mixing bowl, combine the beef broth, onion soup mix, cream of mushroom soup, and Worcestershire sauce.
Place the beef chunks in the slow cooker, followed by the baby carrots if using. Pour the soup mixture over the beef.
Cover the slow cooker with its lid and cook on low for 8 hours or high for 4 hours.
After the cooking time is up, remove the beef from the slow cooker. In a small bowl, mix the cornstarch with cold water until smooth. Stir this mixture into the remaining liquid in the slow cooker, cooking on high for an additional 15-20 minutes until the gravy thickens.
While the gravy is thickening, bring a pot of salted water to a boil. Add the chopped russet potatoes and cook until fork-tender, about 15-20 minutes. Drain and return them to the pot.
Add butter, milk, and seasonings to the drained potatoes. Mash until creamy and smooth, adjusting the milk to your preferred consistency.
To plate, scoop a generous serving of mashed potatoes onto a plate, topping them with the slow-cooked beef and a generous ladle of gravy.
