Ingredients
Scale
4 bone-in pork chops (1-inch thick)
1 large onion, sliced (yellow or white works best)
2 cloves garlic, minced
1 cup chicken broth (low-sodium recommended)
1 cup buttermilk (substitute with regular milk and lemon juice)
1 cup all-purpose flour (or whole wheat flour for a healthier option)
2 tablespoons vegetable oil (olive oil can be used as a healthy alternative)
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon paprika (for a smoky flavor)
1/2 teaspoon thyme (fresh or dried)
Optional: fresh parsley for garnish
Instructions
Begin by patting the pork chops dry using paper towels to ensure a nice sear. Season both sides generously with salt, pepper, and paprika to elevate the flavor profile.
Dip each pork chop into the buttermilk, letting the excess drip off. Next, dredge them in flour, making sure they're evenly coated.
In a large skillet, heat the vegetable oil over medium-high heat. Once hot, carefully add the pork chops. Sear for about 4-5 minutes on each side until golden brown.
In the same skillet, add the sliced onions. Cook for 5-7 minutes until they are soft and translucent, then add the minced garlic. Sauté for an additional minute or until fragrant.
Sprinkle the remaining flour into the skillet, stirring constantly for about 2 minutes to create a roux. Gradually whisk in the chicken broth until smooth. Bring to a simmer, then return the pork chops to the skillet.
Cover and reduce the heat to low. Let the pork chops simmer in the gravy for about 20-25 minutes.
Once the chops are tender, serve them hot along with a generous spoonful of onion gravy over the top. Garnish with fresh parsley.
