Ingredients
Scale
4 cups of chicken or seafood broth
2 packs of instant ramen noodles
1 tablespoon of olive oil
1 onion, diced
2 cloves of garlic, minced
1 bell pepper, diced (preferably green)
1 can (14.5 ounces) diced tomatoes with green chilies
1 pound of mixed seafood (shrimp, crab, and/or fish)
1 tablespoon of Cajun seasoning
½ cup of sliced okra (fresh or frozen)
2 green onions, sliced
Salt and black pepper, to taste
Instructions
In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, cooking for about 2-3 minutes or until they are fragrant and the onion is translucent.
Stir in the bell pepper, followed by the canned tomatoes (with their juice) and sliced okra. Cook for another 3 minutes.
Pour in the chicken or seafood broth, and add the Cajun seasoning, salt, and black pepper. Bring this mixture to a gentle boil, then reduce the heat to a simmer.
Once the broth is simmering, add in your mixed seafood. Allow it to cook for 2-3 minutes, or until the shrimp turns pink and the fish is opaque.
While the seafood cooks, in a separate saucepan, cook the ramen noodles according to the package instructions, usually around 3-4 minutes.
Drain the ramen noodles and divide them between bowls. Ladle the gumbo mixture over the noodles. Top with freshly sliced green onions, and enjoy.
