1 medium onion, diced
2 garlic cloves, minced
1 pound of boneless, skinless chicken breasts
4 cups of low-sodium chicken broth
1 (15 oz) can of diced tomatoes with green chilies
1 (15 oz) can of black beans, rinsed and drained
1 cup of corn, frozen or canned
1 teaspoon of cumin
1 teaspoon of chili powder
Salt and pepper to taste
1 cup of heavy cream
1 cup of shredded cheese, cheddar or Mexican blend
Tortilla chips for garnish
Fresh cilantro for garnish (optional)
Lime wedges for serving (optional)
Instructions
Gather and prep all ingredients: dice the onion, mince the garlic, and cut the chicken into bite-sized pieces.
Heat the olive oil in a large pot over medium heat. Add the diced onion and sauté for 3-5 minutes until translucent. Add the minced garlic and sauté for another minute.
Add the chicken pieces and cook until browned, about 5-7 minutes, seasoning with salt, pepper, cumin, and chili powder.
Pour in the chicken broth, diced tomatoes, corn, and black beans. Bring to a boil, then reduce heat to low and simmer for about 20 minutes.
