4 salmon fillets (fresh or frozen)
2 tablespoons of olive oil
1 cup of heavy cream
1/2 cup of sun-dried tomatoes (packed in oil, drained, and chopped)
3 cups of fresh spinach
2 cloves of garlic (minced)
1 teaspoon of Italian seasoning
Salt and pepper to taste
Fresh basil or parsley for garnish
Instructions
Season the salmon fillets with salt and pepper. Preheat a large skillet over medium heat and add olive oil. Once hot, add the salmon and cook for about 4-5 minutes on each side until golden brown. Remove from the skillet and set aside.
In the same skillet, add minced garlic and sun-dried tomatoes. Sauté for about 1-2 minutes until fragrant.
