Ingredients

Scale
  • 1 pound of lean ground beef
  • 1 large onion, diced
  • 2 cloves of garlic, minced
  • 1 cup of bell peppers, chopped
  • 1 cup of cheddar cheese, shredded
  • 1 cup of mozzarella cheese, shredded
  • 4 large flour tortillas
  • ¼ cup of sour cream
  • 1 teaspoon of cumin
  • 1 teaspoon of chili powder
  • Salt and pepper to taste
  • Cooking oil for sautéing

  • Instructions

  • Step 1: In a large skillet over medium heat, add a tablespoon of cooking oil. Toss in the diced onion and sauté for about 3 minutes until translucent. Add minced garlic and chopped bell peppers, cooking for an additional 3 minutes until softened.
  • Step 2: Increase heat to medium-high and add ground beef to the skillet. Break meat apart with a spatula and cook for about 5-7 minutes until browned and no longer pink. Drain excess fat if necessary.
  • Step 3: Sprinkle cumin, chili powder, salt, and pepper over the beef mixture. Stir well to distribute the spices and meld flavors for about 2 minutes.
  • Step 4: On a large tortilla, sprinkle ¼ cup of both cheddar and mozzarella cheese. Layer the beef and vegetable mixture on one half of the tortilla, then top with another ¼ cup of cheese. Fold tortilla in half.
  • Step 5: In the same skillet, reduce heat to medium and add more oil if needed. Place the folded quesadilla in the skillet and cook for about 3-4 minutes on each side until golden brown and crispy.
  • Step 6: Remove quesadilla from skillet and let rest for a minute. Slice into wedges and serve with a dollop of sour cream or Greek yogurt on the side.
