  • 1 cup of kale, chopped
  • 4 cups of vegetable broth
  • 1 can (14.5 oz) of diced tomatoes, drained
  • 1 can (15 oz) of cannellini beans, rinsed and drained
  • 1 teaspoon of dried oregano
  • Salt and black pepper to taste
  • Fresh basil and grated Parmesan cheese for garnish (optional)

  • Instructions

  • In a large pot, heat olive oil over medium heat. Add chopped onion and garlic, and sautĂ© until soft and fragrant, about 3-4 minutes.
  • Stir in the carrots and celery. Cook for another 5 minutes, allowing the vegetables to soften slightly.
  • Add zucchini and green beans to the pot. Stir well and let cook for an additional 5 minutes.
  • Pour in vegetable broth and add diced tomatoes, cannellini beans, dried oregano, salt, and pepper. Bring to a gentle simmer and let bubble for about 15 minutes.
  • Add chopped kale and allow it to wilt into the soup during the last few minutes of cooking. Stir frequently.
  • Taste and adjust seasoning with more salt or pepper if desired.
  • Ladle the soup into bowls and garnish with fresh basil and a sprinkle of grated Parmesan cheese, if using.
